Straw to golden yellow. Extremely fine perlage. It seems as if the bubbles rose individually and at a precisely defined distance from the mousse point. On the nose, clear smoky notes and vegetal aromas of white cabbage and horseradish. The overall composition is indeed strikingly reminiscent of Franconian smoked sausages with horseradish. In the mouth, the 1992 Réserve definitely shows vintage typicity. Undoubtedly not an outstanding basic wine, but in an amazingly good and stable condition due to the decades of yeast storage. Very good length. Polarising, even in the four-eye review without a real consensus among the tasters. Against this background, we therefore see our rating as a concession decision.

Disgorged in December 2020. Amber yellow. Delicate, almost fragile perlage with very small bubbles that slowly rise. Aromas marked by the tertiary maturity of the base wine. Little fruitiness, very puristic, some green herbs and celery, salty notes that intensify when combined with food. Slight tinge of geranium. Good length. Although the perlage decreases with time, the sparkling wine takes an amazing development and presents itself much stronger on the second day. For lovers of old wines and Japanese sushi cuisine who like to experiment.

Disgorged in December 2020. Bright amber yellow. Fine perlage. Under the influence of air, an iridescent scent of dried fruits, especially pear and various stone fruits, plum liqueur, walnut and keta caviar. On the tongue with good freshness and at the same time age-appropriate development and vintage-typical expression of the wine. Fine foaming. Salty. Excellent length. Undoubtedly a special taste experience.

The wine was evaluated in a blind tasting. We have strict rules for blind tastings. The tasters do not receive any information that would allow them to identify the wines. The tasters are only given access to further information that goes beyond the subject matter if it is absolutely necessary for understanding the wines.
🕓We only had limited time to taste the wine  - typically during an open tasting event, such as a wine fair. It was therefore not possible to observe the development of the wine in the glass over a longer period of time. The informative value of our rating may therefore be limited under certain circumstances.
The wine was tasted as a barrel sample or before an official test number (Amtliche Prüfungsnummer or Staatliche Prüfnummer) was issued. We only accept samples of unfilled wines in exceptional cases, and then only if we can assume sufficient stability in the bottle for a period of at least three months.
During our tasting, the wine showed conspicuous sensory characteristics. This does not necessarily have to be a wine fault. We categorise the quality and quantity of the abnormality and include it in the rating. Wine faults such as cork taint or an atypical ageing generally lead to a complete rejection.
