Cuvée of Sauvignac, Souvignier Gris and Hibernal. Greenish yellow. Very slowly rising, small bubbles. In the nose with a refined yeast note and a complex aroma that is not easy to grasp and cannot be described with simple vocabulary. Several times we thought we had found the right words, and just as often we crossed them out again on our sheet of paper. The aroma reminded us a little of potato and vegetable crisps, but it would be completely wrong to imply that this wonderful sparkling wine is even approximately vegetal. In the mouth, it appears taut, with animating, well-integrated acidity, at the same time wonderfully balanced and with excellent length.
