Some strawberry in the aftertaste.

Very fine, slowly rising bubbles. Multi-layered nose of brioche and dried fruit, especially fig. Alongside hints of Moroccan mint, green tea and roasted coffee bean. Elegant mousseux. Also complex in the mouth with repetition of the aromas already perceived in the nose. Piquant acidity. White chocolate finish. Excellent length, very persistent.

100 % Chardonnay from the 2012, 2013 and 2014 vintages, disgorged in October 2020. Bright golden yellow. Very fine, slowly rising pearls. Changes with increasing aeration like a chameleon in front of different colour backgrounds. Initially, there is a clear autolysis touch with aromas of toast and brioche in the foreground, which is only subtly underpinned by yellow fruity accents. Later, it is more of a wood spice that emerges on the nose and, in combination with more pronounced fruit and menthol, is reminiscent of a New World Chardonnay. At first, the palate is more horizontal than vertical, but after about two to three hours, the wine takes on more depth. Overall, with a strong presence on the palate, creaminess and good mousseux. Strawberry in the finish. Very long.

Very fine, but also lively mousseux. Multilayered depth. Intense, as it were not exuberant fruit aromas, now primarily reminiscent of pear. Excellent length. Invites to meditation, but is just as suitable as a food companion.

A flavoured sparkling wine that is out of the ordinary. Disgorged with peach liqueur and gold leaf after 70 months of yeast storage. The Riesling is from the 2014 vintage. Golden yellow. Fine perlage. As expected, the nose is dominated by peach aromas. Clear sweetness, which unfortunately cannot conceal the vintage problems of the base wine (among other things, a low quality botrytis). Bitter note in the finish. Good length.

Straw to golden yellow. Extremely fine perlage. It seems as if the bubbles rose individually and at a precisely defined distance from the mousse point. On the nose, clear smoky notes and vegetal aromas of white cabbage and horseradish. The overall composition is indeed strikingly reminiscent of Franconian smoked sausages with horseradish. In the mouth, the 1992 Réserve definitely shows vintage typicity. Undoubtedly not an outstanding basic wine, but in an amazingly good and stable condition due to the decades of yeast storage. Very good length. Polarising, even in the four-eye review without a real consensus among the tasters. Against this background, we therefore see our rating as a concession decision.

Several times we thought we had found the right words, and just as often we crossed them out again on our sheet of paper. The aroma reminded us a little of potato and vegetable crisps, but it would be completely wrong to imply that this wonderful sparkling wine is even approximately vegetal. In the mouth, it appears taut, with animating, well-integrated acidity, at the same time wonderfully balanced and with excellent length.

In the yeast-influenced nose, hints of rendered bacon, sweet cherry, flint, but also some keta caviar. Noticeable 2014 vintage tone. Foaming well on the tongue, sweet cherry again, but more pronounced than on the nose. Shows style and substance. Very long.

Restrained, floral and vegetal nose with aromas of yellow citrus, partly yellow, partly green apple and dried fruits, mainly pear, but also with hints of plum. Lean, straight body. Slight bitterness, herbal-spicy on the palate. Clearly shows melon in the finish. Very good length.

100 % Pinot Noir, disgorged in October 2020. Salmon pink. Fine pearls. Floral and fruity nose with typical Pinot scent of strawberry and raspberry. On the palate with fine foaminess. Shows backbone and, as a Rosé, has “a lot of meat on the bone”. Discreet fine tart note in the finish. Very long and persistent. An hour of rest after opening the bottle led to a remarkable increase in our tasting.

Elegant scent of raspberry, apricot, sage and a hint of vanilla. On the tongue it seems extraordinarily filigree and with a little air increasingly multilayered. Delicate spice of green herbs and honey. Long and persistent.

Disgorged in February 2020, bright lemon yellow. Fine, quickly rising perlage. On the nose with aromas of yeast and roasted almond. Shows clear traces of malolactic fermentation. In the mouth delicately creamy, with vegetal aromas, a slightly lactic component, melon, pumpkin and pumpkin juice and some grapefruit on the finish. Very good length. Undoubtedly polarising in its style, clearly develops to its advantage after a few hours of air.

Fine yeasty Pinot scent with hints of strawberry, very close to a rosé wine. Refreshing, precise and clear on the palate, glides easily over the tongue. In the finish a little sweet jam, but at the same time also spicy grapefruit aromas. Very long.

Restrained, slightly yeasty aroma of peach and apricot, partly also as jam. Creamy on the palate. Seems very ripe and shows a surprising sweetness that does not correlate with the analysis data. Fine tart component, very good length.

“Rizzy Starmust” - David Bowie's Ziggy Stardust sends his regards. 100 % Riesling. Disgorged in December 2020. Extremely fine, initially still quickly rising perlage. Quite oxidative, reminiscent of must (“Starmust”), fine almond scent with aromas of apple and pear. Finest mousseux. Despite its polarising and challenging style, quite well balanced. A sparkling wine far from the mainstream that one have to get involved with. Excellent length.

Disgorged in November 2020. Bright shiny straw yellow. Fine, rather slowly rising bubbles. In the nose with a delicate autolysis touch and a puristic citrus fruit. In the background, aromas reminiscent of a forest floor of a mixed forest moistened by a spring rain. Creamy and well foaming on the tongue. Again distinct citrus fruit. Very good balance with ripe, integrated acidity. Excellent length. Peach in the long finish.

Reflective lemon yellow. Very fine pearls. Fine yeasty, delicately floral nose with hints of melon and exotic fruits. Fine mousseux. Gripping Riesling character that is not afraid of acidity, but packs it excellently. Coherent, balanced and at peace. Does not need aromatic effects to convince, perhaps that is why it runs the risk of being a little underestimated at first sip. Great elegance and finesse, excellent length.

Stylistically emancipated.

Cuvée of 50 % Pinot Blanc and 50 % Pinot Noir. Straw yellow with white-golden reflections. Many small bubbles slowly rise from the mousse point. Highly complex aroma of mandarin, brioche and colomba. Multi-layered depth of aromas also on the tongue, with some nectarine, pink grapefruit and quince. Tangerine again, with flesh and skin. Great delicacy and elegance. Subtle acidity. Very long. A masterpiece.

Initially gripping in the mouth, not a pussyfooter, also not a loudspeaker, but a personality with a healthy self-confident appearance. Fine foam. Needs air in its current phase of development. Then becomes clearly finer and more distinguished without losing expressiveness. Excellent length.

Well integrated carbonic acid. Delicately yeasty, with a floral component. A little yellow apple on the finish. Very good length. Conveys drinking pleasure at a high level.

Perfectly integrated carbonic acid. Excellent balance. Needs some air to develop fully in the glass. Then gains more and more depth. Some walnut in the finish. Excellent length, good food companion.

“Kiss Kiss Maddies Lips" – the name and the artist's label are the programme. The colour of Jan Klein's Pétillant naturel, a cuvée of 50% Pinot Noir Précoce and 50 % Pinot Noir, is reminiscent of the strawberry mouth pictured here. Cloudy strawberry red. Fragrance of strawberry, raspberry and some redcurrant against a floral background. Striking on the palate, characterised by fine carbonic acid and a challenging phenolic, which is more comparable to a fierce tongue than a breathed kiss. Very good length.

Certainly a curiosity: A sparkling wine whose carbonic acid is created exclusively by bottle fermentation. Deep golden yellow. Individual, fine bubbles appear in the glass. Extensive scent of honey and dried herbs. In the mouth with little carbonic acid, as in the nose everything is under the motto “honey and herbs”. Reverberating sweetness, very good length. A coherent overall work.
